Mamool
Mamool is a shortbread cookies filled with dates or nuts, like cashew, pistachio and most commonly served to welcome the guests in the middle-east. Baking Instructions

1 Preparation of dough: In a large bowl, mix the melted butter, and sugar with flour. Start working with your fingers and use the water to get a smooth texture of the dough.

2 Add vanilla essence and syrup to the dough and knead them well

3 Rest the dough for 30 minutes in the chiller.

4 Roll out 20 portions of the dough into small balls as per your requirement.

5 For filling: Process the nuts and dates in a mixer

6 Roll the filling into small round shape

7 Shaping: Tak a dough ball and flatten it. place the filling ball in the center and wrap the dough to seal. Pinch the edges to ensure the dough is sealed well. Tip: MAke sure to not use too much filling, or the cookie will crack.

8 Use a nut pick to create interesting cookie pattern. Invert and tap the mold to get the cookie released.

9 Baking: Place the design side up on a large baking sheet.

10 Preheat the oven at 250 and bake the cookies for 15 to 20 minutes

11 Once cookies are baked completely, using a sieve dust confectioner's sugar and store in a air tight container.

3 200g Water

4 200g Sugar

5 50g Syrup

6 3g Vanilla

7 200g Nuts or Dates for filling
